Yes, get PhoneView from ecamm.com and back up what you want to save like text messages, photos, call logs and a lot more.

Then back up the iPhone, in case you change your mind. Restore the phone to factory settings, but stop before it syncs with the back up. If you still want to start from scratch set the iPhone up as a new device with a new name and profile.
