I think that is just a record of WiFi backups from the iDevice to iTunes on the computer.

I think when you make changes is syncs with iCloud, it is immediate for what you have just modified, not a backup, but you can use the info in iCloud to reinstall info on your iDevice.

The backups recorded in iTunes are a record of every sync between your iDevice and iTunes on your computer.
