Are you saying you want the date/time stamp to show on the photo? Or do you just want to have the information available.
The iPhone includes the automatically the date and time with the photo. You can view the information in iPhoto. Some other apps might change the date and time to the time of the download. I use Photo Stream and iPhoto and the information is not changed.
I don't remember if the location is on or off by default. I have it set to off. I believe that setting is in Settings > Privacy.
