Thank you to everyone in this thread. Since I posted the start, things have been changing. First remark - "Find my iphone" is also undeletable on my phone (so why/how itunes wants to copy it over as well as a backup is mysterious). However, that has stopped since the IOS 9 update went in yesterday. For several hours after that, itunes would not open automatically when phone connected, and if opened by me would not sync unless I told it to. Reboots of phone and desktop not helpful. That seems to have stopped without action from me!
The Voice Memos are still being copied every time, whatever their datestamp. There is now, however, no evidence that newly updated apps are being copied to the desktop via itunes. At the end of a Sync, all the usual messages have appeared but the one at the end that copies newly-updated app in succession is not there. I had eight app updates at once yesterday and two more this morning, and have so far seen no Sync message that they have been copied over. Nick Hudd
