Have you tried just syncing with iTunes and avoiding icloud altogether? I do not use the cloud thingy.
In iTunes, you can select to sync various things by checking the various options. Look at iTunes, rather than iCloud. Then stuff is on your phone and computer and not somewhere in never-never land.
