I don't think this is possible. An Apple Bar Genius said you can't restore the data from an app unless it is a paid app in which case the company may keep your data on their central servers.

I was in because my iPad was having some problems with GPS and the only solution was to restore it as new. The genius said I couldn't restore my iPad using restore from backup as I would then put the likely offending app, preference back onto the iPad.

He said the apps themselves would sync back from iTunes and what I would loose is things like high score, current progress, saved articles (cooking app). He said some paid apps keep that information on a server or other back up and would restore it but most free apps didn't do that.

If you do figure out another way, please let us know.
