if you're syncing to iTunes then just follow these simple steps:
- connect your phone to your PC/MAC
- start iTunes
- LEFT click on your phone's name in the far left column
- LEFT click on APPS in the tool bar
- in the RIGHT hand window locate the app you want to remove from your phone. UNCHECK the box next to the app's name. the app will be removed from the left window pane but the app will remain as a part of your library of apps
- LEFT click APPLY then LEFT click REMOVE in the resulting pop-up window. your phone will start to SYNC with iTunes
- to restore the APP simply find the app in your library, check the box next to it's name, apply the change and it's done.

I don't get the option to restore a single app. I'm not restoring my phone
from scratch.
