After several back-and-forth emails with AT&T (with a different person each time!) and numerous non-answers, they seem to have settled on the idea that the discrepancy is because the iPhone does not register data sent or received while it is in "sleep mode for the night."
I'm still not convinced that such a huge difference can be explained away that easily.
