AFAIK when you sync it backups as well

Anything you can sync in iTunes won't be in the backup, no need

Won't the restore from backup also put back photos, logs, docs, etc? It seems to me that it did when I did a restore from backup.

I've lagged behind, because most of the new features either wouldn't work on an older model or I didn't care about. I'll probably be copying the items a backup won't save, backup my iPhone and install 7.1 this evening.
