It sounds like you're still using a POP account for your email. If you are able to switch to IMAP, deleting an email on your iPad will automatically delete it on your iPhone and iMac. Check with your ISP to see whether you can do this switch — it's really worth it. :)

Sure would be handy to be able to move them to Trash all at once. Since "Select All" can be used to move messages into the Trash on OS X, I can't see why it isn't set up the same way on iOS 8. I have a shared and a personal email address. My DH with whom I share an email is the primary user of the iMac which is set up to receive only the shared address.
