There are programs that will pull text messages out of backups. I
haven't tried any, but if you go to macupdate.com and search for "iphone
sms", there will be a few choices. That does mean you have to do local
backups (instead of or in addition to iCloud backups) and have done a
backup since you got the message in question but not since deleting it,
but it may be an option.
As a semi-related aside, does undo undo text message deletes? I don't
have one I want to delete now, but next time I do I'll try it.
