I'm speculating here from 3-4 people I know personally and I think the two main culprits are:
1.) Camera roll pictures
2.) Text Messages - specifically MMS
I think most people never remove the pictures they take from the camera roll and sync to the computer. Also no one seems to believe in deleting text conversations so they can build up.
I agree with you in the past that keeping my music took up the most space followed by video I synced to the phone. Ever since I got an iPad, I usually keep my music library and videos synced to the iPad so I barely use up 1/2 of the 32 GB on my phone.
