I am using a windows 7 Dell brand laptop, core 7 processor , 8 gb RAM. Other than the initial sync which takes a couple of hours, repeat syncs take less than 5 minutes unless there are a lot of large data apps that update. But never more than 10 minutes. I have an iPhone 5S, iPad Air and iPad mini 2 generation. The iPads are usually faster. All are 64 gb with about 9 gb free - so they are pretty full.
I know you were asking about Macs but thought it may help if you do not want to completely change os's
