Obviously, some of that is apparent from the file itself, but the exposure
and date/time can be there only from EXIF data (the date/time is when I
took it)

I can't see filenames in iPhone > Camera, just the roll number.
I wonder why Graphic Converter saw no EXIF data from the iPhone whereas
Image Capture did see it from the iPad?
