Photos are not synced by iTunes to either OS X or Windows. You have to copy them over with other software. Also look at how to use apps within iTunes to sync docs. For example, if you have Docs To Go, you can copy over Excel and Word docs between your iPhone and your computer. (At least that is how it is done with a Mac and not using something like Dropbox.)
Besides the two references Otto gave for tutorials on iTunes, you might want to start with

and click on the various "Learn more" links.
I am not throughly familiar with iTunes and Windows, since I am Mac guy. But if you are proficient with with one platform, you can become proficient with the other. The difference in the vocabularies is the biggest hurtle, and Apple _sometimes_ does some things differently, but usually to eliminate tasks for the user. Help is F1 on a PC and Menu Bar> Help on a Mac, you just need the correct vocabulary to find it fast.

Maybe someone could give an easy way to understand to someone who has never had an apple before, but who knows all the DOS commands beginning with MS DOS 3.1. I have built systems with IBM DOS 3.1 5 14 inch floppies with 386 DX chips, but am feeling stupid here...
