Renaming the iPhone's name is as easy as renaming a file name. When connected to your computer, in iTunes, on the left pane, under Devices, you see your iPhone's name. Double-click and type your desired name. Make sure it's not syncing when you do this.
To sync only selected playlists, click on the name of your phone (the one you just changed). To the right (the main pane/area), you see different tabs like Summary, Info, Apps, Tones, Music, Movies, etc... Click on Music. Check the box "Sync Music". Select "Selected playlists, artists, albums, and genres" instead of "Entire music library". Choose.
