When you delete an app from the iPhone you get a warning that all associated data will be removed, i.e. you will lose your position in the game, your score, etcetera.
You can archive or copy the data or docs from some apps with apps like Phoneview from ecamm, but not all. Since do one has jumped up and said that they have done it themselves, I think you are out of luck.

I don't think this is possible. An Apple Bar Genius said you can't restore
the data from an app unless it is a paid app in which case the company may
keep your data on their central servers.
