It depends. If he had set backup to this computer or set backup to iCloud. If he set backup to this computer, what will be restored is what was on the phone when he last plugged into your computer. If he had set to backup to iCloud then what would be backed up is what was on his phone at the time of this last data connection. Note that to get the iCloud backup, you don't need to plug into iTunes but do it from the settings screen on the iPhone.
