One way to get rid of them is to quit the Mail app (on the iPhone).
Double click the Home button, a passing parade of 'alive' apps can be scrolled across the bottom of the screen, find the Mail icon, click on the little minus sign in the circle (=badge? is that what it's called?), the Mail icon will disappear (but do not worry, you can not delete the Mail app, it is permanently embedded by Apple).
Then click the Home button once, the scrolling line will disappear and the screen return to normal with the mail icon in place, click on it and you are back to usual with none of the 'No sender, no subject' annoyances.
BTW you can do this quit process with any of your 'alive' apps. Again, they will disappear but have not been deleted. To delete third party apps is a different process.
