What do you have a Mac or a PC, it make a difference and there might be different steps.

If you have a Mac, get an app like PhoneView from ecamm.com to copy over whatever you don't have on your computer.

I assume that your iTunes library is still intact, and so you music is still on the computer. Any new music you purchased on the iPhone since the crash will need to be moved over.

Contacts, notes & calendar can sync with your computer, did you set this up?

iTunes does not copy photos to the computer, so make sure you have a copy on your computer.

Next take notes of what is on your old iPhone that you want on your new iPhone and where they are on your computer.

Then sync which ever iPhone you want to iTunes and just set up the which ever items you want on your phone.

If you want some of the old photos on your new phone, then you can use PhoneView to put them on the phone.
