I don't know yet about syncing e-mail with iTunes.
I am familiar with your purpose, though.
My approach has for long been: store the large (amount of) data at
some point in cyberspace, and just e-mail the URL of the data.
So far, I have used a dedicated subdomain of my own website, but I
might as well use services like Dropbox (the Public folder) or
SkyDrive.
I have a policy of deciding and stating an expiration date for the
URL.
In doing so, I prevent others' mailboxes from getting overloaded, and
the data from being not accessible through incompatibility of
attachment standards.
Moreover, downloading files from cyberspace (the cloud) may be more
efficient.
PS, just in case:
You wouldn't need maintaining index files for a website in order to
pass files on, as long as the URL is complete.
